Girl vs Pinterest: Paleo Fudge Edition


Ingredients:
1/2 cup melted coconut oil
1/2 cup creamy almond butter
1/2 cup cocoa powder
1/4 cup maple syrup
1/8 teaspoon salt (unless almond butter is salted, then leave out)


How I did it: 
-Melt coconut oil in glass bowl for 30 seconds. 
-Mix in cocoa power, maple syrup, almond butter, salt and vanilla.
-Stir together until smooth
-Place in loaf pan that has been lined with parchment or wax paper
-Set pan to chill in fridge for 2 or more hours 
-Do productive things until it has hardened, then cut into pieces
-Enjoy! 


Things I did wrong/differently: 
-All our measuring cups were dirty so I just eye-balled all the measurements. This is not necessarily recommended if you always are seeking perfect results, but usually how I roll...
-I added vanilla for no reason but I thought it wouldn't hurt
-Apparently I didn't stir it enough because there were little bits of almond butter goodness every so often



Was it good? 
If you're cool with the whole Paleo thing and understand that this is not actual, real, rich and creamy fudge (seriously, that's a link to the definition of fudge and it's definitely NOT Paleo) then you will enjoy this. 
It's a darker chocolate (might be because I added too much cocoa) but the salt adds a nice bittersweet taste to it. 
The fudge itself is a delectable - melts on your fingers. 
Can't really argue cuz it's sorta fudge and is healthy. 😛

Would I do it again? 
It's not really my type of thing. I'm more a bakers-chocolate-and-sweetened-condensed-milk type of fudge girl, but the rest of the family seems to like it. 

What would I do differently next time? 
Experiment adding nuts or maybe berries. 
I'd make a double batch so it will come out thicker.
